Pun'kin Rolls with Honey Butta

Let me just begin by saying that this recipe made me speechless. The moist pumpkins, the brown sugar sweet sauce that is mixed into the flour, the delicious honey butter spread that goes inside the rolls, the yummy - you get the idea. These are insanely good and insanely easy rolls that A-N-Y-O-N-E can make.

Ingredients: 

6 c. flour, 1 c. wheat flour, 1 package of yeast, I c. of pumpkin puree, 3/4 c. water, 3/4 c. milk, 6 T. butter, 1/3 c. brown sugar (yum!), 2 T. honey, 1 t. salt, 1/2 t. cinnamon, 2 eggs, and Honey Butter Spread (1/4 c. butter, 2 T honey = mixed).

First: Put 2 c. of white flour and the yeast in a bowl. Mix. Set aside.

Second: In a saucepan, mix pumpkin, water, milk, butter, brown sugar, honey, salt, and cinnamon. Cook on warm until butter is nice and melted. Make sure it's lukewarm - you don't want it too hot.

Third: Put the pumpkin mixture AND the two eggs into the flour mixture. Mix. Remember: you don't want the pumpkin mix too hot or you'll have scrambled eggs. Yuck. OK, back to business. Mix the ingredients for 30 seconds. THEN, you have to mix it for 2-3 minutes. You are welcome to use an electric mixer, but I prefer to do it the "real" way - by hand. After this beating, put the 1 c. of wheat flour into the bowl and mix together.

Fourth: Put the dough on to a floured surface. Knead for 3-5 minutes until smooth. Make sure to add in flour when it gets sticky or it's too soft. Place the dough into a greased bowl for one hour. Let it rest and let yourself rest! 

Fifth: Punch the dough down (this is always fun.) Separate into three parts and let the bread rise again for 10 minutes - this is enough time for you to have a cup of tea.

Sixth: Put one of the dough portions on to a floured surface, roll it out until it is a circle.Spread with the Honey Butter Spread. Cut the circle into 12 pizza slices. Roll up each slice from the big end to the small end. Voila! Place on a greased baking sheet for 30 minutes. Warm the oven up to 375 F and once you are ready - pop them into the oven for 15 minutes.

Seventh: The number of perfection :-) Generously spread some more butter on top of the freshly baked pumpkin rolls and eat one. Then share one. Feel free to eat another one! Then share one.
